👉 Wash them thoroughly in clean water and wipe them dry.

Roasting the Dry Fruits
👉 Heat 1–2 tablespoons of pure desi ghee in a heavy-bottom pan.
👉 Add 15–20 cashews and almonds and roast them on low flame until golden and crunchy.
👉 Remove, let them cool, and then chop or crush them coarsely.

Roasting the Amla (Most Important Step)
👉 In the same pan, add the grated amla to the remaining ghee.
👉 Roast on medium heat while stirring continuously.
👉 This process helps remove the natural bitterness and astringency of amla.
👉 Cook until the excess moisture evaporates and the color changes slightly.

Using Jaggery
👉 Once the amla is well roasted, add ½ cup jaggery powder.
👉 Cook the mixture until the jaggery melts completely and blends well.
Jaggery adds natural sweetness, is rich in iron, and keeps the body warm during winter.

Making the Laddoos
👉 Turn off the heat and allow the mixture to cool slightly.
👉 Grease your palms with a little ghee and shape the mixture into small laddoos.
